Activate Yeast: In a small bowl, mix warm water, honey, and instant yeast. Let it sit for 5-10 minutes until it becomes frothy.
Mix Ingredients: In a large bowl, combine the whole wheat flour and salt. Create a well in the center and pour in the yeast mixture, olive oil, and yogurt.
Knead the Dough: Mix everything until a dough forms. Knead it on a floured surface for about 8-10 minutes until it becomes smooth and elastic.
First Rise: Lightly oil a bowl, place the dough inside, and cover it with a damp cloth. Leave it in a warm place for 1 to 1.5 hours or until it doubles in size.
Shape: Punch the dough down to release air. Divide it into equal-sized balls. Roll each ball into a flat circle (about ¼ inch thick).
Cook: Heat a non-stick pan (tawa) over medium-high heat. Place the dough circle on the pan. Once you see bubbles, flip it. Press gently so it puffs up. Cook until both sides have light brown spots.
Store: Keep them wrapped in a clean kitchen towel to maintain softness.
