Whole Wheat Shawarma Dough (Pita Bread)

Ingredients

  • Whole Wheat Flour (Chakki ka Atta): 2 cups
  • Warm Water: ¾ cup
  • Instant Yeast: 1 tsp
  • Honey or Sugar: 1 tsp
  • Salt: ½ tsp
  • Olive Oil: 1 tbsp
  • Greek Yogurt: 1 tbsp

Instructions

  1. Activate Yeast: In a small bowl, mix warm water, honey, and instant yeast. Let it sit for 5-10 minutes until it becomes frothy.
  2. Mix Ingredients: In a large bowl, combine the whole wheat flour and salt. Create a well in the center and pour in the yeast mixture, olive oil, and yogurt.
  3. Knead the Dough: Mix everything until a dough forms. Knead it on a floured surface for about 8-10 minutes until it becomes smooth and elastic.
  4. First Rise: Lightly oil a bowl, place the dough inside, and cover it with a damp cloth. Leave it in a warm place for 1 to 1.5 hours or until it doubles in size.
  5. Shape: Punch the dough down to release air. Divide it into equal-sized balls. Roll each ball into a flat circle (about ¼ inch thick).
  6. Cook: Heat a non-stick pan (tawa) over medium-high heat. Place the dough circle on the pan. Once you see bubbles, flip it. Press gently so it puffs up. Cook until both sides have light brown spots.
  7. Store: Keep them wrapped in a clean kitchen towel to maintain softness.
