🦐 Coconut Shrimp Recipe

Ingredients:

  • 1 lb large shrimp (peeled & deveined, tails on)
  • ½ cup flour
  • 2 eggs (beaten)
  • 1 cup shredded coconut (unsweetened)
  • ½ cup breadcrumbs
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • Oil (for frying)

Instructions:

  1. Prep shrimp
    Wash and pat dry shrimp.
  2. Set up coating station
    • Bowl 1: Flour + salt + pepper
    • Bowl 2: Beaten eggs
    • Bowl 3: Coconut + breadcrumbs + paprika
  3. Coat shrimp
    Dip shrimp in flour → egg → coconut mixture (press gently so it sticks).
  4. Fry
    Heat oil in a pan and fry shrimp for 2–3 minutes per side until golden brown.
  5. Drain
    Remove and place on paper towels.

🌶️ Spicy Dipping Sauce

Ingredients:

  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tsp hot sauce (adjust to taste)
  • 1 tsp honey
  • 1 tsp lemon juice

Instructions:

Mix everything well in a bowl. Taste and adjust spice level.


💡 Serving Tip:

Serve hot with the dipping sauce, lemon wedges, and a fresh salad.
