Ingredients:
- 2 chicken breasts (or thighs)
- 2 tbsp butter
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 medium zucchinis (spiralized into noodles)
- Salt & pepper (to taste)
- 1 tsp Italian seasoning
- Optional: spinach or mushrooms
Instructions:
- Season chicken with salt, pepper, and Italian seasoning.
- In a pan, melt 1 tbsp butter over medium heat and cook chicken until golden and fully cooked. Remove and set aside.
- In the same pan, add remaining butter and garlic. SautƩ until fragrant.
- Pour in heavy cream, stir, and let it simmer for 2ā3 minutes.
- Add Parmesan cheese and stir until the sauce thickens.
- Toss in zucchini noodles and cook for 2ā3 minutes (donāt overcook).
- Return chicken to the pan, coat with sauce, and serve hot.
